Grünkohl-Wrap mit Süßlupinen Tempeh von Lazybean

Kale Wrap with Sweet Lupin Tempeh

Kale doesn't always have to simmer for hours. Raw and well massaged, it turns tender and is perfect in a wrap. Add a warm filling of mushrooms, chard, puntarelle, sunflower seeds and our Sweet Lupin Tempeh, which tastes hearty and nutty and, with 16 g of protein per 100 g, keeps you properly full.

Serves 2 · approx. 25 minutes

Ingredients

For the salad:

  • 2 handfuls of kale
  • 1 small handful of lettuce
  • 2 tomatoes
  • 1 bell pepper
  • 100 g vegan feta
  • 1–2 tbsp vinegar
  • 1 tsp mustard
  • Salt and pepper

For the warm filling:

  • 1 pack of Sweet Lupin Tempeh (200 g)
  • 1 onion
  • 150 g mushrooms (e.g. brown button mushrooms)
  • 2–3 chard leaves
  • 1 handful of puntarelle
  • 2 tbsp sunflower seeds
  • 1–2 tbsp light soy sauce
  • Oil for frying

Also: 4 wraps

Method

  1. Prepare the kale: Strip the leaves from the tough stems and tear them into small pieces.
  2. Massage the salad: Put the kale in a bowl with the vinegar, mustard, salt and pepper and massage it well with your hands until it softens and wilts a little. Chop the lettuce, tomatoes and bell pepper, add them and crumble the vegan feta over the top.
  3. Fry the filling: Slice the onion and mushrooms, and chop the chard and puntarelle. Cut the tempeh into strips or cubes. Heat a little oil in a large pan and fry the tempeh and onions until golden brown first. Then add the mushrooms, sunflower seeds, chard and puntarelle and fry briefly. Finally, deglaze with light soy sauce.
  4. Combine: Add the warm filling to the salad and toss everything together loosely.
  5. Fill the wraps: Warm the wraps briefly in a dry pan, fill them with the mixture, roll them up and enjoy.

Tips

  • Massaging pays off: The longer you massage the kale, the more tender it gets. One minute is already enough.
  • No puntarelle? Chicory or radicchio add a similar gentle bitterness.
  • As a bowl: Without the wrap, it also works as a warm salad, for example with rice or quinoa.
